Creamy Tomato Smoked Sausage and Asparagus Tortellini is the perfect recipe to share with a crowd during your next backyard cookout. A cheesy, filling delight, it’s ready to enjoy in less than half an hour.


Creamy Tomato Smoked Sausage and Asparagus Tortellini
Servings: 6

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound smoked turkey sausage, sliced into bite-sized rounds
  • 1 clove garlic, minced
  • 1 2/3 cups chicken broth
  • 1 can (15 ounces) tomato sauce
  • 3/4 cup heavy cream
  • 18 ounces cheese tortellini
  • 1/2 pound fresh asparagus, trimmed and cut into bite-sized pieces

Directions:

  1. In a large rimmed skillet, heat olive oil over medium heat.
  2. Add sausage and brown on both sides. Add garlic and stir until golden, 20-30 seconds.
  3. Add broth, tomato sauce, cream, and tortellini; stir to combine. Bring to a light simmer.
  4. Cover and simmer over low heat for 10 minutes. Add asparagus during the last 5 minutes of cooking until the tortellini is tender and the sauce has reduced.
