If you peek into our pantry, you'll find rows and rows of Kuner's beans. We've embraced the Colorado brand and have been avid "fans of the cans" since moving our family to the state many years ago. What I didn't know- until just this week- is that Kuner's offers more than just beans. Their product line extends to tomatoes and vegetables as well.

As a busy mom and wife, I am always searching for quick, easy, and delicious food options. It's no easy feat, but having a pantry stocked with nutritious foods keeps me one step ahead of a mealtime meltdown.

What do I do with all those cans? As if I needed another reason to love Kuner's, their website has a recipe page that is filled with brilliant suggestions from savory to sweet. My family has enjoyed a number of their recipes, but the Chili Mac Skillet is one you'll definitely want to bookmark. Nothing beats a one-pot meal!

Chili Mac Skillet

  • 1 pound lean ground beef, (at least 90%)
  • 1 (15oz) can Kuner’s® Kidney Beans drained and rinsed
  • 1 (15oz) can Kuner’s® Whole Kernel Corn, drained
  • 1 (14.5oz) can Kuner’s® Diced Tomatoes, drained
  • 1 (4oz) can diced green chilies, drained
  • 1 (80z) can tomato sauce
  • 1 cup uncooked elbow macaroni
  • 2 teaspoons chili powder
  • 1 cup water
  • Salt and pepper to taste
  • 1/2 cup shredded reduced-fat Cheddar cheese

Preparation:

In 12-inch nonstick skillet, cook ground beef over medium-high heat 5 to 7 minutes or until no longer pink, stirring to break up ground beef. Stir in all remaining ingredients except cheese. Bring to a boil. Cover; reduce heat. Simmer 12 to 15 minutes or until macaroni is tender. Sprinkle with cheese. Cover; let stand 2 to 3 minutes or until cheese is melted.
