When my kids were younger we were always on the go running from sports practices and games, to music lessons and performances. There were many nights that we had to grab fast food on the way home because it was just too late to cook anything. It took a while, but I finally found a few recipes that I could put together ahead of time so the family could eat a decent meal after all the running around. One of my family's favorites is Chicken Taco Soup. This recipe has stood the test of time and my kids still request it.
Chicken Taco Soup
The original recipe is from a friend of mine that I use to scrapbook with, Beth N. She was a Creative Memories consultant and would have monthly scrapbooking events at her house. About 10 of us would gather to scrapbook, have a break from the duties of motherhood, meet up with friends, and eat! Beth always had something delicious for us and this soup was one of my favorites that became a family favorite!
Pull out your crockpot | Cook on Low 5-6 hours - High for 2-4 hours
Ingredients
- 3-4 frozen chicken breasts
- 1 small chopped onion
- 1 can original Rotel
- 1 - 14.5 oz can black beans - do not drain
- 1 - 14.5 oz can red kidney beans - do not drain
- 1 - 14.5 oz can white northern beans - do not drain
- 1 - 14.5 oz can corn - drained
- 1 packet taco seasoning
- 1 packet ranch dressing mix
Toppings
- tortilla chips
- sour cream
- grated cheddar cheese
- avocado
- hot sauce
Directions
- Put ingredients in the crockpot in the order listed above - do not include the toppings.
- Do not stir!
- Put lid on crockpot and cook.
- Cook on Low 5-6 hours - High for 2-4 hours
- When cooking is done remove chicken and shred.
- Put shredded chicken back in the crockpot
- Stir
- Serve in bowls and add toppings as desired
Pro Tips:
- If you know you will be short on time in the morning, this can be assembled in the crock of your crockpot and refrigerated overnight. In the morning just put the crock in the base and turn it on.
- This recipe is super easy for young kids to help assemble or for older kids to assemble by themselves.
- This soup freezes really well, so if you don't think you'll finish it put into containers or bags and freeze.
